An emulsifier is a compound that has one end that is attracted to fats (hydrophobic) while the other end is attracted to water (hydrophilic). The key to a stable emulsion is the introduction of an emulsifier, or an emulsifying agent. But you'll end up with a less than stable mixture that will later separate again.
